Food Fight: Ostrich vs. Bison

There’s more to grilling than just chicken and beef. Try ground bison or ostrich—two relatively low-fat alternatives that pack massive amounts of both protein and iron.

As far as nutritional value is concerned, the two are nearly identical. “Ostrich is considered a red meat, and if you look at the comparison [to bison], both are very similar,” says Ruth Frechman, R.D., a spokesperson for the Academy of Nutrition and Dietetics. “The iron content is very similar, too.”

There’s just one caveat: These meats tend to dry out when cooked too quickly. To preserve flavor and juices, grill both on low to medium heat.
